Viral frozen yogurt bark has been all the rage lately, but these easy frozen yogurt bites may take the cake for me! Topped with white chocolate and sprinkles for a funfetti/birthday cake flavor! They are lower in sugar, incredibly easy to make, and make the perfect protein-rich healthy snack or treat.

Ingredients
Yogurt Bites
1cupthick Greek-style yogurt, plain or vanilla
3tablespoonscashew (or any other nut or seed) butter
2-3tablespoonshoney or maple syrup (taste test)
2scoopsprotein or collagen peptides powder
1teaspoonvanilla extract
1/4cuprainbow sprinkles
Chocolate Coating
3/4cupwhite chocolate chips
2teaspoonscoconut oil
1/4cuprainbow sprinkles
Instructions
Line a 12-hole muffin pan with parchment paper liners or use a silicon muffin pan or even an ice cube tray.Mix together the yogurt bites mixture by combining all of the ingredients in a medium bowl. Whisk together until smooth, thick, and creamy. Taste the mixture and adjust as needed.Divide it amongst your muffin cups, filling each muffin hole about 2/3 way full.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, add a teaspoon of chocolate to the top of each bite, filling that last 1/3 of each crevice. Sprinkle sprinkles over the top.Freeze! You will want to freeze the bites for 3-4hours before removing them from the molds. Store in an air-tight container in the freezer for up to 3 months. Let the bites thaw a few minutes before enjoying for the creamiest texture.
