I love making birthday cake inspired snacks and treats and these are fun to make and fun to eat. SO yummy! It doesn’t have to be your birthday to make birthday cake protein bites! I had some sprinkles on hand and hence this cake flavor was born!

They are quick to whip up, taste like an indulgent treat, are nutritious, and are perfect for an easy, healthy snack. Make a big batch of these bites and keep them on hand for weeks for easy, grab-and-go protein snacks!

Each bite packs 15 grams of protein. They are made with the realest and simplest ingredients, oat flour, protein powder (this acts as a “flour” to the bars and helps the ingredients stick together), desiccated coconut, cashew butter and sweetened with a little bit of honey.

I always have some protein snacks on hand during the week. I love adding protein powder to homemade bars, energy balls, muffins, and desserts. It’s such an easy way to boost the protein content and help make them more filling. These bars make a great snack, pre or post-workout snack, or even a healthy dessert. Everything about these bites is amazing.

Personally, my favorite part aside from the taste is the texture, it’s really incredible.  It’s cake-like in a no bake kind of way- so chewy and soft! You would never guess it by the decadent taste, but these no bake protein bites are secretly good for you.

Last but not least, a handful of rainbow sprinkles complete the protein bites. Everything comes together perfectly to create one out-of-this-world treat! Great for kids, parties, pot lucks and celebrations of all kinds!

I have a special place in my heart for no bake bars and desserts. They were the first kind of recipes I started experimenting with when I started making healthier treats. If you are an almond lover like me, these are the treat for you! Ultra fudgy, chewy with sprinkles, these have it all!  After all, everything tastes better with sprinkles.

If you wanted to make these a different flavor, you totally could. For example, lemon cake bars would be SO YUMMY or orange. I would start with adding some fresh lemon or orange juice and zest to the batter and a little bit extra oat flour. you can do a taste test and adjust from there. Also, chocolate chips would be so yummy if you don’t have sprinkles! Want to make them super fancy? Add some mini marshmallows AND chocolate chips. Honestly, so many combinations would work, it’s just such an easy and delicious base and a place to start from.

Ingredients

  • 1 cup oat flour (oats blended to a flour)
  • 1/2 cup desiccated coconut
  • 1/2 cup protein or collagen peptides powder
  • 1/3 cup cashew butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • 1-2 tablespoons sprinkles

Instructions

  • Mix the oat flour,protein powder, coconut, cashew butter, honey, and vanilla extract together in a bowl.
    Roll into 12 balls (about1- 1½ inches in size) and place them on a small baking sheet (or plate) lined with parchment paper.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle the white chocolate over each protein bite.
    Immediately add sprinkles to each one and place in the refrigerator for about 5-10 minutes for chocolate to set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
