Ingredients
1cupoat flour (oats blended to a flour)
1/2cupdesiccated coconut
1/2cupprotein or collagen peptides powder
1/3cupcashew butter or almond butter
1/4cuphoney or maple syrup
1teaspoonvanilla extract
Chocolate Drizzle
1/2cupwhite chocolate chips
1teaspooncoconut oil
1-2tablespoonssprinkles
Instructions
Mix the oat flour,protein powder, coconut, cashew butter, honey, and vanilla extract together in a bowl.Roll into 12 balls (about1- 1½ inches in size) and place them on a small baking sheet (or plate) lined with parchment paper.
Chocolate Drizzle
Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle the white chocolate over each protein bite.Immediately add sprinkles to each one and place in the refrigerator for about 5-10 minutes for chocolate to set.Store in the fridge for up to 1 week or freezer for up to 3 months.
