I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “bark” – layers of yummy foods placed in flat layers on top of each other then frozen. Once frozen the “bark” is broken or cut into squares.
The bottom layer is usually something that can be sliced in flat pieces like yogurt, chocolate, cottage cheese, banana slices, strawberry slices or even flattened dates. Then layers of yummy things like dried fruit, nuts, seeds, nut butter and coconut is added then frozen to create a simple and healthy dessert or snack. I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this viral tropical yogurt bark is definitely a winner.
We are going the Aloha route with this recipe, coconut, lemon, blueberries, almonds, (OH BOY!) and we add the yellow and green jewel tones of pineapple and kiwi all wrapped in creamy yogurt. Tropical Yogurt Protein Bark
Ingredients
Yogurt Mixture
- 1 cup thick Greek-style yogurt, plain or unflavoured
- 1 scoop protein or collagen peptides powder
- 2 tablespoons honey or maple syrup
- 1 lemon, juice and zest
- 1/2 teaspoon vanilla extract
Toppings Optional
- 1/2 cup pineapple pieces, fresh or canned - sliced
- 1/4 cup kiwi - sliced
- 1/4 cup blueberries
- 1/4 cup almonds, chopped
- 1/4 cup coconut flakes
Instructions
- In a mixing bowl, mix the Yogurt Mixture ingredients together until well combined.Pour yogurt mixture onto a baking sheet lined with parchment paper. Spread it out into a thin layer around ¼ - ½ inch thick. It will end up around 11 x 9 inches in size.Add toppings onto the yogurt mixture.Place baking sheet in the freezer for at least 2-3 hours until yogurt is hardened.When fully hardened, remove yogurt bark from parchment paper and break apart into small pieces - you can use your hands or cut with a knife.Store the yogurt bark in an air-tight container in the freezer until you are ready to enjoy it and consume right away before it melts.
