Tropical Yogurt Protein Bark

Ingredients

Yogurt Mixture

  • 1 cup thick Greek-style yogurt, plain or unflavoured
  • 1 scoop protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 lemon, juice and zest
  • 1/2 teaspoon vanilla extract

Toppings Optional

  • 1/2 cup pineapple pieces, fresh or canned - sliced
  • 1/4 cup kiwi - sliced
  • 1/4 cup blueberries
  • 1/4 cup almonds, chopped
  • 1/4 cup coconut flakes

Instructions

  • In a mixing bowl, mix the Yogurt Mixture ingredients together until well combined.
    Pour yogurt mixture onto a baking sheet lined with parchment paper. Spread it out into a thin layer around ¼ - ½ inch thick. It will end up around 11 x 9 inches in size.
    Add toppings onto the yogurt mixture.
    Place baking sheet in the freezer for at least 2-3 hours until yogurt is hardened.
    When fully hardened, remove yogurt bark from parchment paper and break apart into small pieces - you can use your hands or cut with a knife.
    Store the yogurt bark in an air-tight container in the freezer until you are ready to enjoy it and consume right away before it melts.
