Ingredients
Yogurt Mixture
1cupthick Greek-style yogurt, plain or unflavoured
1scoopprotein or collagen peptides powder
2tablespoonshoney or maple syrup
1lemon, juice and zest
1/2teaspoonvanilla extract
Toppings Optional
1/2cuppineapple pieces, fresh or canned - sliced
1/4cupkiwi - sliced
1/4cupblueberries
1/4cupalmonds, chopped
1/4cupcoconut flakes
Instructions
In a mixing bowl, mix the Yogurt Mixture ingredients together until well combined.Pour yogurt mixture onto a baking sheet lined with parchment paper. Spread it out into a thin layer around ¼ - ½ inch thick. It will end up around 11 x 9 inches in size.Add toppings onto the yogurt mixture.Place baking sheet in the freezer for at least 2-3 hours until yogurt is hardened.When fully hardened, remove yogurt bark from parchment paper and break apart into small pieces - you can use your hands or cut with a knife.Store the yogurt bark in an air-tight container in the freezer until you are ready to enjoy it and consume right away before it melts.
