Blackberry & Coconut Condensed Milk Ice Cream

Once you and your guests take a bite of this ultra-creamy blackberry ice cream, they will never believe it is homemade. And, even better, it is made without any fancy tools or equipment. The little bits of blackberries add a lovely texture. Lightly sweetened with honey, this is refreshing summer dessert.

Fresh blackberries and homemade unsweetened coconut condensed milk are the main ingredients in this refreshing frozen treat. Make this a couple of hours before serving so it will have a smoother, creamier consistency.

This ‘healthier’ ice cream is just like regular ice cream – super rich, uber decadent – but it’s secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy coconutty goodness.

The big secret here is that you will be using homemade condensed milk, free of the LOADS of sugar in store bought stuff.

The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.

I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures. Its always about the convenience to them, rather than peoples health.

But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful ice cream, you get all the real, natural coconut flavor – no artificial food flavorings here!  Each mouthful is like a piece of heaven.

The recipe for the homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.

Ingredients

  • 1 cup condensed milk  - store bought or sugar free recipe below in notes
  • 1 cup blackberries, fresh or frozen
  • 1 tablespoon honey or maple syrup
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon juice from any citrus fruit (I used orange)

Instructions

  • If you are going to make your own sugar free condensed milk, make it first so its ready and cooled when you wish to make the ice cream.
    Place blackberries in a bowl and mash with a fork, leaving a few larger chunks.
    Add the coconut condensed milk, honey, vanilla and citrus juice and stir to combine.
    You can pour mixture into popsicle molds or any container you wish.
    Place in freezer for 2-3 hours, or until the ice cream has hardened, but can still be easily scooped.
    This ice cream is best when enjoyed fresh, but if you want to go ahead and store it, that’s an option too. It’s good for up to 1 week in the freezer.
    Just make sure that when you are ready to enjoy, leave it out for 15 minutes so it can soften up for scooping.
    Serve with fresh blackberries or your favorite toppings.
