The world of desserts and sweets is constantly evolving, with new trends and flavors being introduced every day.  When I saw this high protein fudge made of cottage cheese on my TikTok for you page I knew I had to try it. I mean, come on!

I have to admit – I was completely sceptical of the viral cottage cheese fudge trend. As a fitness professional, I have seen SO many “healthy” food trends come and go, and honestly, a lot just kind of fall flat.

But I decided to give it a try with this fudge recipe and holy moly – I was so impressed! The cottage cheese gives the fudge such creaminess, and gives a subtle cheesecake flavor, too. Plus it adds protein!

It is amazing! Literally amazing. This weird cottage cheese concoction is actually not weird at all. I can tell you for certain that this high protein treat is better than any of those so called healthy or low calorie candy you can find at the grocery store.

With a deliciously rich flavor, creamy consistency, velvety smoothness and luscious texture, the cottage cheese adds a subtle tang that complements the sweetness of the chocolate. This homemade fudge looks, feels, and tastes like the real deal. I promise you … it is SO GOOD! And no … you can’t taste the cheese one bit.

Its just as it sounds, cottage cheese that’s been blended or whipped to a light, fluffy consistency – similar to yogurt. It has a delightful mouthfeel, with a perfect blend of creamy, tangy, and a little salty.

Because cottage cheese is relatively low in carbohydrates, many who are on the keto diet or another low-carb eating plan are including it in their diets.

Cottage cheese is really good for you. Not only is it full of protein and packed with nutrients, but it is low in calories. About 80% of the protein in cottage cheese is casein, which is slowly absorbed by your body, and is ideally consumed before sleep for muscle synthesis.

That makes cottage cheese the ideal evening snack with 28 grams of protein, healthy fats and fibre as well as added vitamins and antioxidants, depending on what fruits and nuts you use as toppings.

But when you give cottage cheese a trip through the food processor or blender, the textural conundrum goes away. All you are left with is a creamy, airy mousse like treat.

I added sprinkles, because everything tastes better with sprinkles, so this was going to be a for sure win. But, you can get creative and do any toppings, add ins or flavor you like to recreate your own unique masterpiece.

Add 1-2 tablespoons of peanut butter, crushed cookies or chocolate chunks. You can even add in a tiny splash of flavored extracts like mint, or orange.

Chocolate Cottage Cheese Fudge

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup coconut oil, melted
  • 1/2 cup cocoa powder
  • 1/2 cup chopped pecans
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons sprinkles

Instructions

  • Line a 9 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a food processor or blender, combine the cottage cheese, melted coconut oil, cocoa powder, honey and vanilla extract. Blend until smooth and well combined. Add chopped pecans and pulse a couple of times to combine.
    Pour the mixture into the lined pan, smoothing the top with a spatula or back of a spoon.
    Place in the refrigerator and let the fudge chill for at least 2-3 hours or until firm.
    Once set, remove the fudge from the dish using the parchment paper and cut it into 16 or more smaller pieces.
    Store the fudge in an airtight container in the refrigerator for up to one week. If you prefer a firmer texture, you can also freeze the fudge for longer storage. Thaw in the refrigerator before serving.
