Zesty Lemon Squares

The classic Grandma-style lemon slice recipe that we may have fond childhood memories of was based on packaged sweet biscuits, condensed milk and butter in the base, and a lemony topping based on icing sugar. It completely lacked the nutrients of whole food.
On the other hand, this healthier plant-based version of the lemon slice is packed with healthy fats from nuts and coconut which is important to keep us satiated between meals, fiber from oats, and naturally sweetened with honey.
These delicious squares taste creamy and tangy from the fresh lemon flavour in this easy to make slice. No baking required. Lemons are well known for being rich in vitamin C, a crucial nutrient which helps support our immune system, making these squares the perfect, healthy, dessert or anytime snack.

Ingredients

Base

  • 1 cup almonds or walnuts, or a mix
  • 1 cup dates, soaked for at least 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/2 cup oats, instant or quick

Filling

  • 2 cup cashews, soaked 3+ hours and drained
  • 1 13.5oz can coconut cream. full fat
  • 1/4 cup coconut oil, melted
  • 2 lemons juice and zest (if you would like it more lemon-ey add more) 
  • 1/4 cup honey or maple syrup

Instructions

Base

  • Line an 8×8 inch pan with parchment paper.
    Place all the ingredients for the crust (almonds, dates, coconut and oats) in a food processor and process until well-combined and sticky.
  • Press base mixture into prepared pan, evenly covering the bottom. Set aside.

Filling

  • In the food processor, combine cashews, coconut cream, coconut oil, lemon juice and zest, and honey and process until smooth and creamy.
    Taste test at this point – if you'd like a stronger lemon flavor, add more lemon juice and zest or if you would like it sweeter add more honey. Pulse again to combine.
  • Scoop filling on top of the prepared base and spread evenly with a spatula or back of a spoon.
    Cover pan with plastic wrap and place in the freeze to set (at least 1 hour).
    Move pan to the fridge until ready to serve. Slice into 16 bars (or your preferred size/number), to serve,
