White Chocolate Macadamia Nut Bars
What’s your favorite Clif bar flavor? Mine is white chocolate macadamia. Yeah, I know, nothing really exciting. I stick to the classics. Lately I've been experimenting with homemade Clif Bars. I mean, who doesn't love Clif Bars?! They are basically a candy bar disguised as a granola bar!However, even though I love Clif Bars, I choose not to eat them very often because of their high sugar and calorie content. Let’s be real, store bought bars are expensive! You can make protein or granola bars for less than 1/3 of the price and better yet, they taste so much better and are so much better for you without the bunch of unhealthy stuff in them!This recipe makes a replica bar of the white chocolate macadamia Clif bar, but with wholesome ingredients so you can enjoy a delicious, yet cheaper (and healthier) version of it.I don't know how to live without a batch of homemade granola bars in my fridge. They are a balanced snack that tastes amazing and fills me up until my next meal.I’ve made several different varieties of granola bars over the years. But I am rather particular about what’s in my bar too. I want it to stay together and taste good too.Things I want in a bar:HEALTHY FATS and lots of them!Rolled oats or some other whole grainSlightly sweet, but not overwhelmingly sweetA healthy dose of protein so they keep me full in between mealsAnd chocolate in some form, stuff’s got to taste good peopleThese bars include all the above.So, snack time just got better. These delicious bars are studded with macadamia nuts, white chocolate, and coconut. Packable and handheld, perfect for an on-the-go breakfast or snack.These no-bake bars taste just like white chocolate macadamia Clif bars, if not better. The texture is chewy but firm enough to keep them at room temperature, meaning you can bring the bars with you when you go hiking for example.Every time I make this recipe, it doesn’t last in my house for more than two days. My family just can’t get enough of it!This delightful bar offers a creamy and crunchy experience like no other, packed with delicious macadamia nuts and luscious white chocolate.. Ingredients
- 1 cup macadamia or cashew nuts
- 1 cup oats, instant or quick
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup desiccated coconut
- 1/3 cup natural peanut butter
- 1/4 cup protein or collagen powder
- 1/4 cup white chocolate chips
- 1 teaspoon vanilla extract
Chocolate Drizzle
- 1/2 cup white chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place oats and coconut into a food processer and process until broken down and crumbly. Add dates, macadamia nuts, peanut butter, protein powder and vanilla and process briefly until well combined. Lastly add ¼ cup white chocolate chips and pulse a few times until combined.Be careful not to over process as its nice to have texture and different sized “bits” in your bars.Press mixture into the bottom of your pan or dish evenly using a spatula or back of a spoon.
Chocolate Drizzle
- Place the remaining ½ cup chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle over bars with a spoon and place in fridge 1-2 hours to firm up and set.Cut into 12 bars. Store in airtight container in the freezer or refrigerator.
