This White Chocolate Peanut Butter Protein Fudge is like regular fudge – super rich, uber decadent – but secretly healthy and guilt-free! Yup, that means no butter, no white sugar and no sweetened condensed milk… just pure, fudgy, nutty, chocolatey goodness. The big secret here is that the recipe has been ‘heathified’ and you will be using homemade condensed milk, free of the LOADS of sugar in store bought stuff.
The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water. I’m sure you are asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge, you get all the real, natural favors – no artificial food flavourings here! Each little cube is like a piece of heaven.

White Chocolate Cashew Butter Protein Fudge
Ingredients
- 1 3/4 cups white chocolate chips
- 1 cup condensed milk - store bought or homemade sugar free recipe below in notes
- 1/2 cup cashew butter
- 1/2 cup chopped peanuts, raw or roasted
- 1/4 cup protein or collagen peptides powder
- 1 teaspoon vanilla extract
- Sprinkle of sea salt
Instructions
- If you are going to make your own sugar free homemade condensed milk, make this first and store in fridge so its ready when you are going to make the fudge.Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.In a medium saucepan, add condensed milk and cashew butter. Gently warm over a low heat until just bubbly stirring frequently.Turn off heat and add the white chocolate chips and continue stirring until chocolate is completely melted. Add protein powder and vanilla extract and stir in. Add peanuts (reserve a couple of tablespoons of chopped peanuts to sprinkle over the top) and pour mixture evenly onto prepared pan and smooth out with a spatula or back of a spoon.Sprinkle the reserved peanuts on top of the fudge and pat a little with your hand pushing the nuts into the fudge a little to make sure they stay in place when you are eating the fudge. Sprinkle with sea salt if desired. Let fudge cool until set. Remove fudge from pan using the parchment paper handles and cut fudge into small squares and store in a sealed container at room temperature.Slice into 1 inch cubes or any size squares.To store: These fudgy squares should be stored in the refrigerator, covered and will keep well for up to 4 weeks.To freeze: Place leftovers in a zip lock bag and store it in the freezer for up to 3 months.
