White Chocolate Cashew Butter Protein Fudge

This Cashew Butter Protein Fudge will have you hooked! It's made with white chocolate chips, cashew butter, and protein powder. It doubles as a protein bar recipe and a healthy dessert - the ultimate healthy snack to treat your taste buds when you are on the go.

Ingredients

  • 1 3/4 cups white chocolate chips
  • 1 cup condensed milk  - store bought or homemade sugar free recipe below in notes
  • 1/2 cup cashew butter
  • 1/2 cup chopped peanuts, raw or roasted
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract
  • Sprinkle of sea salt

Instructions

  • If you are going to make your own sugar free homemade condensed milk, make this first and store in fridge so its ready when you are going to make the fudge.
    Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    In a medium saucepan, add condensed milk and cashew butter. Gently warm over a low heat until just bubbly stirring frequently.
    Turn off heat and add the white chocolate chips and continue stirring until chocolate is completely melted.
    Add protein powder and vanilla extract and stir in. Add peanuts (reserve a couple of tablespoons of chopped peanuts to sprinkle over the top) and pour mixture evenly onto prepared pan and smooth out with a spatula or back of a spoon.
    Sprinkle the reserved peanuts on top of the fudge and pat a little with your hand pushing the nuts into the fudge a little to make sure they stay in place when you are eating the fudge. Sprinkle with sea salt if desired.
    Let fudge cool until set.
    Remove fudge from pan using the parchment paper handles and cut fudge into small squares and store in a sealed container at room temperature.
    Slice into 1 inch cubes or any size squares.
    To store: These fudgy squares should be stored in the refrigerator, covered and will keep well for up to 4 weeks.
    To freeze: Place leftovers in a zip lock bag and store it in the freezer for up to 3 months.
