Walnut Brownies With Fudge Sauce

Simple to whip up in a food processor, these delectable healthy brownies are going to change the way you think about dessert and are a sure must try.

Ingredients

  • 2 1/2 cups walnuts or almonds or a mix
  • 2 cups dates, soaked at least 30 minutes and drained
  • 1 cup desiccated coconut
  • 1/2 cup cocoa or cacao powder
  • 2 teaspoons vanilla extract

Fudge Sauce For Topping

  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa or cacao powder
  • 1/4 cup honey or maple syrup

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the brownie mix out easier for cutting. Set aside while you make the brownies.
    Place walnuts and coconut into a food processer and process until broken down and crumbly. Add dates, cocoa and vanilla extract and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your brownies.
    Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the fudge sauce.
     

Fudge Sauce For Topping

  • Place all ingredients for the fudge sauce into a small bowl and stir it together until it's creamy and smooth.
    Remove the brownies from the refrigerator and slice into 9-12 slices (or your preferred size) and serve.
    Drizzle the sauce over the brownies when serving.
    Store it in an air-tight container in a pantry or cabinet. If you store it in the refrigerator, it will harden but once you liquefy the coconut oil again, it will be ready to use.
    Simply gently warm in the microwave or small saucepan on the stove and stir until creamy and smooth again.
    Leftovers can be stored in the refrigerator, covered, for up to two weeks, or place brownies in an airtight container and store in the freezer for up to six months.
