Ingredients
- 1 cup heavy cream, whipped until firm
- 1 tablespoon cocoa powder, folded in
- 1 tablespoon peanut butter (optional) folded in
- Stevia or sweetener to taste see note below
- 1/4-1/2 teaspoon vanilla extract
Instructions
- Once the cream is whipped, fold all ingredients together. You can eat it right then but it’s sooooo much better chilled.Or pipe mousse into 4 shot glasses. Serve immediately or chill until serving.Sweetener: You can use powdered sugar. Try a tablespoon to start. If you would like it sweeter, add another tablespoon. You can also use a zero calorie sugar substitute for a sugar free or low carb version. Use a 1:1 sugar substitute. For best results, use powdered variety such as Swerve powdered sugar substitute.Top Tip: To save yourself some time and effort, use an electric mixer and make sure your bowl (preferably a metal one!) and beaters are nice and cold before you get started. This will help your cream whip quicker, easier, and make it more sturdy.
