Tahini Vanilla Freezer Fudge

A non-chocolate treat? Who am I?? Is this a new me?
Haha… well this unusual fudge recipe is a delicious reason to set that chocolate aside for a change. I love the toasty tahini flavor, the familiar vanilla, and the creamy coconut.
With a handful of ingredients, this freezer fudge is an easy treat or snack, to keep stashed away for …well, any reason!
Healthy fats have become popular with the keto movement. No longer is eating a mouthful of fatty goodness frowned upon. After decades of playing the villain, humans once again embraced healthy, real food fats.
Incredibly healthy foods with fats like tahini and coconut join forces in this soft, salty-sweet fudge. No baking or cooking needed, made with wholesome ingredients and so darn simple to make.

This recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

It now comes in a variety of forms from water to milk, cream, sugar, butter, oil, flour, dried and shredded allowing for a variety of creative ways to add coconut to a healthy diet.

As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost.

Ingredients

  • 1 cup tahini (sesame butter( well stirred
  • 1/4 cup honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons cocoa powder
  • 2 teaspoons vanilla extract

Toppings

  • 1/4 cup chocolate chips
  • Flaky sea salt - optional

Instructions

  • Line a 8 x 4-inch loaf pan (or a similar sized dish) with parchment paper and set it aside. Or use a silicone baking pan.
    Add tahini, honey, coconut oil, vanilla, and cocoa powder to a mixing bowl. Mix together until a thick and smooth fudge batter forms.
    Pour the fudge batter into the lined loaf pan and use a spatula or back of a spoon to spread the fudge evenly in the pan. Then, sprinkle with sea salt and/or chocolate chips
    Freeze for at least one hour, and once the fudge has frozen through, remove it from the freezer and cut it into 12 square slices.
    Enjoy immediately and store any remaining fudge slices in the freezer so they do not melt.
