These are the perfect snack to have around when you are craving something sweet but healthy. Each bite provides a little fiber, protein, healthy fat, and natural sugars for an energy boost.

Ingredients

½ cup sesame seeds

½ cup hemp hearts

1 tablespoon white chia seeds

¼ cup mixed dried fruit – goji berries, raisins. pineapple etc

7  Medjool dates, pitted or ½ cup dried dates, soaked for 30 minutes and drained

¼ cup coconut oil, warmed until liquid

juice of 1 lime

Instructions

Combine all dry ingredients in a medium-size bowl. Set aside.

Place dates and dried fruit in blender or food processor; purée until thick paste forms.

Pour the melted  coconut oil into the date paste in the blender/food processor and add lime juice.

Blend for 1 minute on medium speed. Add to dry ingredients and mix until well combined.

Press into a lined pan of your choice and set in the fridge for an hour or more.

Cut into bite-size squares and store in the fridge or freezer in an airtight container for up to 2 weeks.
