Superfood Breakfast Bars

Busy mornings just got easier with these no-bake breakfast bars. Get your day started with a boost of raw superfood energy! I love these bars because they take just a few minutes to make, plus they are tastier and more budget-friendly than store-bought bars!

Ingredients

  • 1/4 cup almonds
  • 1/4 cup cashews
  • 1/2 cup dates, soaked for 30 minutes and drained
  • 1/4 cup sunflower seeds
  • 1/4 cup desiccated coconut
  • 2 tablespoons coconut oil
  • 2 tablespoons hemp or chia seeds
  • coconut butter (optional:, softened to drizzle on top)

Instructions

  • Combine almonds, cashews, dates, sunflower seeds, desiccated coconut and coconut oil in food processor until textured batter is formed (about 2 minutes).
    Transfer to bowl and stir hemp seeds into batter.
    Use hands to form batter into rectangular shape (about1/2" thick) on baking sheet.
  • Place in freezer for 10 minutes to harden. Remove and slice into bars.
    Drizzle or spread coconut butter on top (if using). Store in refrigerator.
