Ingredients
1/4cupalmonds
1/4cupcashews
1/2cupdates, soaked for 30 minutes and drained
1/4cupsunflower seeds
1/4cupdesiccated coconut
2 tablespoonscoconut oil
2tablespoonshemp or chia seeds
coconut butter (optional:, softened to drizzle on top)
Instructions
Combine almonds, cashews, dates, sunflower seeds, desiccated coconut and coconut oil in food processor until textured batter is formed (about 2 minutes). Transfer to bowl and stir hemp seeds into batter.Use hands to form batter into rectangular shape (about1/2" thick) on baking sheet.
Place in freezer for 10 minutes to harden. Remove and slice into bars.Drizzle or spread coconut butter on top (if using). Store in refrigerator.
