Strawberry Lemon Cheesecake Bites

This Cheesecake Bites recipe is simple, creamy, sweet and will melt-your-mouth. These little cups of deliciousness are the ultimate healthy treat to satisfy your sweet tooth.
They make the perfect bite-sized dessert that take minutes to prepare. No baking needed and so easy to customize! You can dress them up and decorate them for any occasion.
Healthy and full of good fat these cuties are perfect for an after workout or any time snack, lunch box treat or snack on the go.

Ingredients

Base Layer

  • 1 cup almonds or walnuts (or a mix)
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup desiccated coconut

Lemon And Strawberry Layers

  • 1 cup cashews, soaked 3+ hours and drained
  • 1-2 lemons, juice and zest, depending on how lemon-ey you prefer
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, fresh, or if using frozen, thaw and drain

Instructions

Base Layer

  • Place the cashews and coconut in a food processor and process until broken down and crumbly. Add the dates and continue to process until a sticky dough is formed.
    Spoon mixture into a 12 silicone muffin mold or muffin liners in a muffin baking pan and press down with the back of a teaspoon. Place in the freezer while you make the next layer.

Lemon And Strawberry Layers

  • Place all filling ingredients (except the strawberries) in the food processor and process until smooth. Spoon about 2/3 of the mixture onto the bases and smooth with the back of a spoon and place in the freezer to set for 10 - 15 minutes.
    Process strawberries. Add the strawberries to the remaining filling and blend until smooth. Spoon the strawberry filling onto the lemon layer and place into the freezer until they set completely, approximately 2 hours.
    Keep stored in the freezer in an air tight container and remove them a few minutes before serving/eating.
