Sneaky Cauliflower Ice Cream

You won’t believe how delicious and easy this ice cream recipe is! This sneaky cauliflower ice cream only takes 10 minutes of prep time and is made with a secret ingredient: cauliflower (but you won't even taste it).  This recipe is an incredible way to get one of the most nutritious vegetables on the planet into your diet.
When I first read about this idea, part of me went ‘ugh’ – the other part went ‘ooh, intriguing’. Deciding to let the second voice win I tried it and was pleasantly surprised.
Ok, as a health and fitness expert I like to take classical desserts and spin them on their healthy heads and I also like to squeeze in as many veggies as possible into my daily diet.
I’ve always had a bit of a soft spot for “nice cream” which is made from frozen bananas and my love for veggie ice cream comes from that. After all, we have been adding veggies to smoothies for years, I think it’s about time we did the same to ice cream.
You would never think cauliflower goes well in ice cream until you actually try it. Here is a quick, 3-ingredient cauliflower nice cream recipe that will change your mind.
Course Dessert, Snack

Ingredients

  • 2 cups small head cauliflower, steamed or use frozen cauliflower rice
  • 2-3 bananas
  • 2-3 tablespoons honey or maple syrup

Caramel Topping (optional but will make this "nice" cream sensational)

  • 1 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup coconut milk or cream, full fat
  • 1/4 cup honey, maple syrup or brown rice syrup
  • 1 teaspoon vanilla extract
  • pinch salt

Instructions

  • Peel and slice the bananas to 1 inch slices. Spread the banana slices on parchment paper or inside a Ziploc bag and freeze until frozen solid.
    In a food processor blend frozen banana slices, fresh cauliflower and honey together until smooth
    Serve immediately as a soft serve, or pour into a glass or metal loaf pan. Cover with plastic wrap or lid and freeze,
    For best ice cream consistency, take container out of the freezer and let sit out at room temperature for 10 minutes. If it's in a microwaveable container, you can also microwave it for 15 seconds until softened.
     

Caramel Topping

  • Combine all the caramel topping ingredients in the food processor and process until smooth and creamy. You can adjust the consistency by adding more coconut milk if it is too thick to pour easily.
