These red velvet protein bars are made with simple healthy ingredients, have no sugar or flour, making them the perfect gluten free, dairy free and sugar free homemade protein bar!

This no bake red velvet slice tastes nothing like the real thing- and that’s a good thing in my opinion, because who needs to eat chocolate cake with red food colouring in it? The answer – not me. In fact, there is no need for red food colouring in my diet (or yours) at all.

This healthy red velvet slice contains only wholesome ingredients. This means there is not white processed flour, truckloads of sugar, butter, oil, sweetened condensed milk or artificial food coloring.

The bottom layer is chocolatey with beetroot, nuts, coconut and dates to sweeten. The top layer is rich, delicious, yogurt and cream cheese frosting.

It’s rich, moist, soft, creamy, lush, and super delicious!

The stunning red hue is all natural, coming from beetroot, one of the winter’s most nourishing vegetables which has a huge array of health benefits, especially raw. Combining it with a selection of nuts and coconut, it’s the perfect guilt free treat to have in the fridge for when those sugar cravings appear or you get the snack attacks!

Beets are an excellent source of folate, a B vitamin and a very good source of manganese, potassium, and copper that are essential for healthy muscles, bones, liver, kidneys, and pancreas to name a few. They are also high in dietary fiber, magnesium, phosphorus, immune-boosting vitamin C, iron, and vitamin B6.

But, that’s not all! Beets are furthermore valued for supporting the body’s natural detoxification process and helping to purify your blood and your liver.

I was so happy with how these red velvet bars turned out; They legit remind me of a no bake red velvet cake! All those layers like a cake and frosting; But very much sugar free and healthy. Gluten free too as a bonus.

You would never ever know that these Red Velvet Protein Bars are actually good for you.  They taste just like any other chocolatey fudgy bars – they are sweet, rich and very flavorful.

BUT, the big difference?  This is good for ya.  It’s naturally red (no artificial food coloring here), low in sugar (no white sugar here either), gluten free (yup, no bleached white flour).  I swear you would never know it, though.

This red velvet protein bar recipe is so easy to make as well, it probably should be illegal. But when you cut it up into bars and plate them, they look so pretty and perfect and divine, people will swear you had to have spent hours making them. If only they knew! But we know. Cause we’re awesome..

Ingredients

Red Velvet Layer

  • 1 cup red beets, raw, chopped
  • 1 cup almonds, or walnuts
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract

Protein Frosting

  • 1/2 cup Greek-style thick yogurt
  • 1/2 cup cream cheese
  • 1/2 cup protein or collagen powder, plain or vanilla
  • 1 teaspoon vanilla extract

Instructions

Red Velvet Layer

  • Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Add all ingredients to the food processor and process until well combined into a sticky dough.
    Scoop out the mixture and press evenly into the baking pan.
    Transfer to the fridge and let it firm up for around 30 minutes.

Protein Frosting

  • In a bowl, mix softened cream cheese (leave out of fridge for a couple of hours or microwave 10 seconds to soften), yogurt and protein powder and vanilla until smooth.
    Mixture should be thick but smooth and spreadable.
    Add yogurt if too thick, more protein powder if too thin.
    Pour the frosting over the chilled crust and spread evenly with a spatula or the back of a spoon, then place back in the fridge for 30 minutes or so.
    Take out, cut into 8-10 bars or more smaller squares.
    Store leftovers in the fridge for up to 1 week or freezer for up to 3 months.
