Ingredients
Red Velvet Layer
1cupred beets, raw, chopped
1cupalmonds, or walnuts
1/2cupdates, soaked 30 minutes and drained
1/2cupdesiccated coconut
1/4cupcocoa powder
1teaspoonvanilla extract
Protein Frosting
1/2cupGreek-style thick yogurt
1/2cupcream cheese
1/2cupprotein or collagen powder, plain or vanilla
1teaspoonvanilla extract
Instructions
Red Velvet Layer
Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add all ingredients to the food processor and process until well combined into a sticky dough.Scoop out the mixture and press evenly into the baking pan.Transfer to the fridge and let it firm up for around 30 minutes.
Protein Frosting
In a bowl, mix softened cream cheese (leave out of fridge for a couple of hours or microwave 10 seconds to soften), yogurt and protein powder and vanilla until smooth.Mixture should be thick but smooth and spreadable.Add yogurt if too thick, more protein powder if too thin.Pour the frosting over the chilled crust and spread evenly with a spatula or the back of a spoon, then place back in the fridge for 30 minutes or so.Take out, cut into 8-10 bars or more smaller squares.Store leftovers in the fridge for up to 1 week or freezer for up to 3 months.
