Raspberry Protein Snack Balls

Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book.
Moreish snack balls, bliss balls, energy bites, call them what you like, are one of the easiest things to make, and they are a perfect little nutrient-dense bite for a satisfying and beneficial snack!  
This recipe is full of healthy ingredients like protein, healthy carbohydrates and fats along with fibre, minerals and vitamins. Pop one of these babies into your mouth and you get a boost of energy and satisfy sweet cravings in an instant.
They also look and taste delicious and are a great way of incorporating healthy stuff into your diet. Mixed in one bowl, no equipment needed, these easy yummy no-bake, energy balls are the perfect healthy snack for busy families.
These healthy snack balls freeze perfectly for up to 3 months in an aright container - making them a great snack-on-the-go for kids and adults alike!

Ingredients

  • 2 cups almond meal (ground almonds)
  • 1 cup vanilla protein powder
  • 2/3 cup desiccated coconut
  • 1/4 cup honey or maple syrup
  • 1/3 cup cold water
  • 1 teaspoon vanilla extract
  • 24 raspberries (fresh or frozen)

Chocolate Coating

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil
  • Extra desiccated coconut for rolling

Instructions

  • Combine almond meal, protein powder and coconut in a large bowl. Add vanilla extract, honey and water and mix to form a dough. Add extra water if the mixture is not coming together.
    Take around a tablespoon of the mixture (enough for one ball) and use your finger to create an indent so that you can press in a raspberry. Use your fingers to shape the ball around the raspberry with the mixture. Repeat for remaining balls. Place balls on a baking tray and put in the freezer for 15 minutes.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour coconut into a shallow dish ready to roll the balls in.
    Remove snack balls from fridge, and after checking they are firm and set skewer each ball, or use 2 forks to hold each one, or a fork holding them underneath, dip into the melted chocolate. Then roll each ball in coconut and place on a rack to dry.
    Keep refrigerated.
    Store snack balls in fridge for up to a week or in the freezer for up to 3 months.
