Protein Yogurt Bark

This is a creamy high protein treat you can feel good about eating. This recipe is a little tangy, a little sweet, incredibly healthy and easy to make. Your whole family will love it!
Cottage cheese is the latest food craze. It’s a high protein curdled milk product with a mild flavor and creamy texture. Some brands include live and active cultures known as probiotics. These probiotics improve your overall gut health, keeps your heart healthy and helps boost your immune system.
I often enjoy a bowl of cottage cheese mixed with yogurt and blueberries or peaches for breakfast. It’s super satisfying and keeps me full until mid-afternoon. Since it’s such a healthy food, I thought why not make a dessert out of cottage cheese and yogurt?
So, this frozen yogurt and cottage cheese bark with cashew butter and chocolate drizzle is my new favorite treat. It’s delightfully refreshing and oh-so-healthy.
The ingredients are mixed together with a little sweetener then poured onto a tray or into a pan and frozen. No food processor needed.
You can customize it with assorted toppings, such as chocolate, nuts, granola or fruit. The taste is sweet and a little tangy and the texture is creamy and smooth. Nuts give it a nice crunch. It’s so good!
There are many different bark recipes around now. It is basically a super healthy frozen treat. It's gooey, chocolatey, crunchy, sweet and salty. No wonder it's a viral recipe on social media!
I’m not gonna lie, I’m usually quite skeptical of the viral food trends on social media. Balsamic vinegar in sparking water? Butter in coffee? That weird pink pickle wrapped in candy thing on TikTok? Errrr no thank you. But frozen cottage cheese bark? I’m intrigued.
This bark recipe features a layer of the creamy cottage cheese and yogurt, topped with chocolate drizzle and your choice of toppings. It’s the perfect tasty treat to keep in the freezer!
I love the way the bark melts in your mouth as you eat it. It’s frozen, but because it’s spread so thin, it melts fairly quickly. It gets creamy and the flavors coat your tongue and it’s just oh-so-perfect!
Your kids will love this recipe. I think they will have a lot of fun helping you make it and/or creating their own masterpieces.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup whole milk cottage cheese
  • 1/2 cup cashew (or any other nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Optional Toppings

  • Sliced banana
  • 1/4 cup roasted peanuts or almonds, chopped
  • 2 tablespoons graham cracker crumbs
  • 1/4 cup shredded coconut

Instructions

  • Line a baking sheet with parchment paper or waxed paper or you can use an 8 x 8-inch baking pan lined with parchment paper.
    Place yogurt, cottage cheese, cashew butter, honey and vanilla into a bowl and mix with a whisk until well combined smooth and creamy.  Taste test and add more honey or vanilla if you think it needs it.
    Spread the mixture evenly onto the parchment lined baking sheet forming into a rectangle shape, using your spatula, about ½ inch thick.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Add dollops of the melted chocolate on top of the cottage mixture and swirl it around using a toothpick or fork.
    Add remaining toppings like sliced banana or other fruit, graham cracker crumbs or chopped nuts.
    Freeze the bark for a minimum of 2-3 hours until hardened. Remove from the freezer and cut or break into pieces. Transfer pieces of bark to a freezer bag and store up to 1 month.
    A tip on serving: this is pretty hard straight from the freezer. I like to let mine sit at room temperature for 5-10 minutes until it’s softened a bit. It’s still cold, creamy and frozen but more the texture of ice cream versus a hard bark.
    It is SO good.
