I. LOVE. DATES. They are just one of those snack cabinet staples I can’t live without. In my quest to find healthier snacks, I have started buying more dates as I love to use dates as a base in most of my snack balls, no-bake bars, or if I need a natural sweetener in a cookie or frosting. They are little morsels of natural sugar and a great alternative to refined sugars. You don’t need many dates to make something sweet!

The dried fruit has a caramel-like sweetness that can also help reduce cravings for sugary snacks. I’m always on the hunt though for creative ways to dress up my dates, and I just knew these smashed dates would be delicious!

Protein Stuffed Dates With Peanut Butter & Chocolate

Ingredients

  • 20 Medjool dates
  • 1/3 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup Rice Krispies

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup peanuts, chopped (salted or unsalted, roasted or raw)
  • Flaky salt - optional

Instructions

  • Grab a date and slice it in half lengthwise, making sure not to cut all the way through. Peel the date open a bite and remove the center pit and little stem at the top if there is one. Discard the pits.
    Mix together protein powder, peanut butter, honey, and Rice Krispies until everything is mixed together and combined.
    Stuff each date with 1 teaspoon or so of the protein mixture. If dates are larger, use more. Once they are all stuffed, melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is melted, you can dip the date into the chocolate. You can either dip it completely and coat it completely or dip half. I like to dip half because I think it’s the perfect balance of flavors.
    Or you can simple drizzle the melted chocolate over the dates with a spoon.
    Sprinkle the chopped peanuts on top of the dates and sprinkle with flaky salt if desired.
    Place in the fridge for at least 30 minutes for the chocolate to set before serving.
    Store in fridge for up to 1 week or freezer for up to 3 months.
