Protein Nut Fruit Bar

If you love nuts and crave sweet and salty snacks, these homemade protein fruit and nut bars are for you. Nuts and seeds are a good source of protein, fiber, and healthy fats, and contain a variety of vitamins and minerals.
This recipe is made with your choice of seeds and nuts, sweetened with dried fruit and a little honey. The recipe is completely customizable, so you can make a snack bar that you will love eating and knock the socks off the store bought competition.
Not only are these healthy plant based bars good for you, they are easy to make and affordable. In less than an hour, you can make a delicious batch of bars that taste amazing and keeps well. You should probably make a double batch!

Ingredients

  • 1 cup nuts, pecans, walnuts, almonds or a mix
  • 1 cup dried fruit (apricots, figs, dates, sultanas, pineapple or your choice) soaked 30 minutes and drained, roughly chopped
  • 1 cup desiccated coconut
  • 1/2 cup seeds pumpkin, sunflower, sesame, etc
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup protein powder of choice
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Topping (optional)

  • 6 oz chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Place nuts in food processor and process until broken down and crumbly. Add soaked chopped fruit, seeds, coconut, peanut butter, protein powder, honey, coconut oil and vanilla extract and pulse until well combined into a sticky dough. You can leave it quite chunky if you like or process further to make it smoother.
    Scoop out mixture and press evenly and firmly into a parchment lined loaf tin. Place into the freezer while you make the chocolate topping

Chocolate Topping

  • Place chocolate and coconut oil into a microwave-safe container and microwave on half power in 30 second intervals, stirring between each interval, until smooth and creamy. You can also melt the chocolate over a pan of simmering water.
    Pour the chocolate on top, then refrigerate until set (1-2 hours).
    Slice into bars when set.
