Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup pineapple chunks, fresh or canned (drained)
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons walnuts, chopped
  • 2 tablespoons desiccated coconut
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  • If you prefer your cottage cheese smooth, add it to a food processor or blender and process until creamy and smooth. Or if you don’t mind it a bit lumpy simply add to your serving bowl and add other ingredients as below.
    Scoop the cottage cheese into a serving bowl and add pineapple, protein powder, walnuts,  coconut, honey and vanilla and mix until well combined.
    Double or triple the recipe for meal prep and store in the fridge for 3 days.
