Pineapple Coconut Nice Cream With Caramel Sauce

Creamy coconut milk mixed with condensed milk for a simple yet amazing little dessert. These two ingredients make this nice cream coconut-y and rich with just the right amount of sweetness.
Condensed milk is a magic ingredient when making healthy ice cream - the end result will be creamy and smooth and simply delicious.
But the problem is although many recipes call for condensed milk, I would rather not use the canned stuff that is loaded with questionable ingredients. 
But don’t worry.  You can easily make your own unsweetened condensed coconut milk with only a can of good quality, full fat coconut cream and I have provided a recipe link so you can choose to use if you wish. 
The wonderfully simple unsweetened condensed milk recipe I recommend can be used for pies, puddings, custards, as a decadent coffee or tea creamer, on porridges, and for anything else that requires a creamy base. Basically, it makes everything creamier, richer, and deliciously sweet.
There are some recipes that are just better with condensed milk (think fudge and ice cream!) and this super simple recipe creates a delicious sugar free condensed milk, perfect for eating straight out the jar or in your favourite recipes!
Sweetened condensed milk…oh the memories! As a kid, I used to eat it by the spoonful, straight out of the can. I loved its dreamy creaminess – just like rice pudding, but without the rice. Heavenly indulgence.
Back then, I did not realise how much sugar it contains!
Hard to believe….but….
Manufacturers take out about 60% of the water from the milk to “condense” it down. After they“ condense” the milk, they add about 40% sugar to fill the void from the water. I’m sure you’re asking yourself why the manufacturers do this.
They add tons of sugar to the condensed milk as it gives a longer shelf life, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
So I’m afraid, regular sweetened condensed milk is not health friendly at all.
The nutritional profile of a tablespoon of regular condensed milk contains 10g carbs, all of which are sugars. Standard canned condensed milk contains 90 calories, 15 carbs, and 15grams of sugar PER SERVING.
But once you know you can make your own unsweetened condensed milk – and it’s a way more healthier product, you have the option of using it whenever a recipe calls for condensed milk. If you make it yourself from canned coconut cream it has under 1g net carbs and NO added sugar.
It’s a win-win for all of your baking needs!
The ice cream base of this recipe is made using coconut milk or cream and coconut condensed milk; meaning that the flavour really shines. This is definitely an ice cream for coconut lovers! Add in some pineapple chunks, top it with homemade caramel sauce that I also provide a recipe for and you have a match made in heaven.

Ingredients

  • 1 cup coconut milk or cream
  • 1/2 cup coconut condensed milk, store bought or sugar free recipe link below in notes
  • 1 cup pineapple chunks, fresh or canned, chopped
  • 1/2 cup almond or cashew butter
  • 2 tablespoons honey or maple syrup

Toppings

  • Caramel sauce – store bought or homemade recipe link below in notes
  • Toasted coconut shreds

Instructions

  • If using homemade sugar-free coconut condensed milk and homemade caramel sauce, make these first so they are ready when you need them. Both recipes below in notes.
    Place all ingredients in a food processor or high speed blender (except the pineapple chunks) and process until smooth and creamy. You may need to stop and scrape down the sides of your blender to ensure the mixture is fully combined.
    Add in the pineapple chunks and pulse a few times to combine.
    Pour your coconut nice cream mixture into a freezer-friendly container and place in the freezer. For the first hour, stir the nice cream mixture every 15 minutes, before allowing to freeze completely for at least 3 hours.
    When ready to serve let the nice cream thaw for 15 minutes to soften a little before scooping into bowls.
    Or use a metal spoon to scrape the surface to create shavings. The shavings will form into a round shape similar to an ice cream scoop.
    Serve the nice cream topped with caramel sauce. Sprinkle toasted coconut over and serve immediately.
