Pineapple Coconut Candy

The best coconut candy, no-bake, gluten-free, healthy, paleo-friendly and easy to make. This good for you candy will be ready in 15 minutes and will fix all coconut cravings. A perfect combination of a satisfying treat without the guilt! I have made these candies for years and it is my go-to whenever I want something sweet but still be healthy. The richness of the coconut butter and oil is very satiating to the taste buds.

Ingredients

1 cup almonds, roughly chopped

1 cup coconut butter

1 cup coconut oil

1 cup shredded coconut

2-3 tablespoons honey or maple syrup

Rind and zest of one lemon

5 dried pineapple rounds, chopped

Instructions

Combine coconut butter, oil, honey and lemon rind in blender or if ingredients are warm and easy to mix you could do it by hand. Mix well. Separately, grease a baking sheet with coconut oil.

Distribute chopped pineapple evenly on your baking sheet. Sprinkle chopped almonds and shredded coconut evenly over the pineapple. Pour coconut butter and oil mixture over pineapple, almonds, and coconut.

Place baking sheet in freezer for a couple of hours or until candy is firm then use a spatula to break up candy in into single serving pieces.  Store candy in the freezer in a container.
