Pineapple Cashew Energy Bites

Let’s go to the tropics with these coconut, cashew, and pineapple energy bites!
Energy bites are compact sweet treats made from nutrient dense ingredients like pineapple and coconut is a delicious combination, are easily portable and provide a good dose of energy.
These slightly sweet and tropical tasting energy bites make for a perfect healthy, any time of the day snack you can grab on the run or enjoy at home.

Ingredients

  • 1 cup cashews, soaked 3+ hours and drained
  • 1 cup fresh or canned pineapple pieces
  • 1 cup desiccated coconut
  • 1/4 cup coconut oil, melted
  • 1-2 tablespoons honey or maple syrup

Instructions

  • If using canned pineapple, drain the liquid off the pineapple using a colander.
    Add the cashews to a food processor and process until broken down and crumbly. Add the pineapple pieces, half the shredded coconut along with the coconut oil and honey and continue to process until mixture is smooth.
  • Place the remaining shredded coconut on a large plate.
    Roll the dough into 10-12 balls then roll in the shredded coconut flakes to coat.
    Keep your fingers damp as you roll the dough so it doesn't stick to your hands!
    Store the bites in the refrigerator 2 hours to set before enjoying! Store bites in the refrigerator up to 2 weeks or in the freezer up to 3 months.
