Welcome to very easiest easy peanut butter no bake cookies! They’re sooo easy to whip up and even easier to eat (‘cuz that’s how it should always work). With just a few simple steps, you will be enjoying soft ‘n chewy peanut butter no bake cookies aka the best no bake peanut butter oatmeal cookies you will ever meet.
Over the last few weeks, I have eaten more of these peanut butter no-bake cookies than I would like to admit as I got the recipe right. They are sweet and nutty, with an addictive chewy texture that comes from lots of peanut butter and whole rolled oats. I have pretty much had a constant supply of them on hand, because as soon as you finish one batch, it only takes a few minutes to whip up another and pop it in the fridge to chill.
I recommend you enjoy these peanut butter no-bake cookies for dessert or an afternoon treat, but if I’m being totally honest, they make a great grab-and-go breakfast, too. Can you tell that I can’t get enough of them?

Peanut Butter Protein Cookies (No Bake)
Ingredients
- 2 cups rolled oats
- 1 cup peanut butter
- 1/2 cup desiccated coconut
- 1/4 cup protein or collagen peptides powder
- 1/4 cup honey or maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
Instructions
- Line a baking sheet with parchment paper and set aside.In a medium sized bowl, stir together peanut butter, honey, coconut oil and vanilla until smooth. If needed a couple of 15 second bursts in the microwave can help melt these ingredients together. Or use double boiler method - (pot of boiling water with the bowl resting on top) to melt the ingredients together. Do not over heat, they just need a little help in softening and blending together. If you live in a hot climate you would not need to do this.Let the mixture cool as if you add the chocolate chips when its warm they will melt. Once cool, add the oats, coconut and chocolate chips and stir until combined. Use a 2-tablespoon cookie scoop to portion the dough. Use your hands to form into 16-20 balls and place on the baking sheet, then flatten into disks with your fingers (the disks will become more cohesive as they chill).Chill for an hour or two or overnight to allow the cookies to firm up.Store refrigerated for up to 5 days or freezer for up to 3 months.
