Peanut Butter Nut Clusters

These peanut butter nut clusters are amazingly yummy, crunchy, and perfectly sweetened - yep, even without sugar. If you're looking for one of the simplest and best snack/dessert recipes there is, look no further,because these peanut butter nut clusters are one of them.
If you're all about that sweet and salty life -especially when it comes to dessert - you're going to LOVE these. The recipe combines peanuts, pecans, and a smooth peanut butter chocolate sauce to form a delicious nutty-crunchy party in your mouth.
Also, on top of all that awesomeness, this is probably the easiest recipe you'll ever make! All you need is just a few minutes, and 4 ingredients to make them and then you just have to wait for them to harden up in the freezer.
Now, I used pecans and peanuts to make the nut clusters. But you can actually use any nuts you want!
Anyway, these peanut butter nut clusters are sweet, salty, nutty and crunchy and incredibly delicious. Everyone who tries them - thinks they are amazing and has no clue they are sugar-free nut clusters. 
Personally, I love using them in place of a protein bar for a low carb snack. But, they also make a great quick breakfast or even dessert! They are also SO good sprinkled on my oats in the morning or on my salad at dinnertime. They also really satisfy my craving for a sweet-savory treat in the afternoon.
They also make standout gifts - box them up with each cluster in its own foil or paper candy cup.

Ingredients

  • 1/2 cup pecans, crushed up
  • 1/2 cup peanuts
  • 1/4 cup peanut butter
  • 1/2 cup white chocolate chips

Instructions

  • Line a baking sheet or tray with parchment paper or use a silicon tray.
    Place peanut butter and white chocolate chips in a medium-sized bowl and microwave with 30 second bursts at 50% power stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the peanut butter and chocolate chips together.
    Mix chocolate chips and peanut butter together until a thick sauce forms.
    Add crushed up pecans and peanuts to your bowl and mix all together until well combined, and the nuts are thoroughly coated in the peanut butter chocolate sauce.
    Scoop out about 1 tablespoon-size cluster at a time onto the baking sheet
    Makes around 7 large clusters, depending on your preferred size.
    Freeze for around 30 minutes-1 hour.
    Store leftovers in the refrigerator for up to about 7days. So you can enjoy a cluster every single day during the week!
    Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
