This recipe is quick, easy, high protein, and healthy. Its thick, rich and naturally sweetened with dates. It’s a peanut butter lover’s dream, adding a deep, nutty richness. The dates bring a natural caramel-like sweetness, and the cinnamon adds just a little warmth.

Peanut Butter Date Protein Ice Cream
Ingredients
- 1/2 cup cottage cheese
- 1/2 cup thick Greek-style yogurt, plain or unflavoured
- 1/2 cup dates, soaked 30 minutes and drained
- 1/2 cup coconut milk
- 1/4 cup protein or collagen peptides powder
- 1 tablespoon peanut (or any other nut or seed) butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Toppings Optional
- Drizzle with caramel sauce – store bought or recipe link below in notes.
- Chopped nuts
- Drizzle of peanut butter
Instructions
- Add all ingredients to a high-speed blender or food processor.Blend until completely smooth and creamy, scraping down the sides as needed.Eat immediately for a soft serve consistency or pour the mixture into a freezer-safe container and freeze for at least 4-6 hours or until firm.Let sit at room temperature for a few minutes before scooping.Enjoy as is or top with a drizzle of caramel sauce (recipe below) or a drizzle of extra peanut butter, cinnamon, or crushed nuts!
