Peanut Butter Date Protein Ice Cream

Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup thick Greek-style yogurt, plain or unflavoured
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup coconut milk
  • 1/4 cup protein or collagen peptides powder
  • 1 tablespoon peanut (or any other nut or seed) butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Toppings Optional

  • Drizzle with caramel sauce – store bought or recipe link below in notes.
  • Chopped nuts
  • Drizzle of peanut butter

Instructions

  • Add all ingredients to a high-speed blender or food processor.
    Blend until completely smooth and creamy, scraping down the sides as needed.
    Eat immediately for a soft serve consistency or pour the mixture into a freezer-safe container and freeze for at least 4-6 hours or until firm.
    Let sit at room temperature for a few minutes before scooping.
    Enjoy as is or top with a drizzle of caramel sauce (recipe below) or a drizzle of extra peanut butter, cinnamon, or crushed nuts!
