Passionfruit & White Chocolate Overnight Oats
Ingredients
- 1/4 cup oats
- 1/2 cup coconut milk (or milk of choice)
- 1/3 cup coconut yoghurt
- 1 scoop protein or collagen powder
- 1 tablespoon chia seeds
Toppings
- 2 tablespoons yogurt
- 2 tablespoons passionfruit pulp or puree, store bought or fresh
White Chocolate Magic Shell
- 2 tablespoons white chocolate chips
- 1 teaspoon coconut oil
Instructions
- Combine the oats, milk, yogurt, protein powder and chia seeds in a container. Mix until well combined then add a layer of yoghurt and place in fridge while you melt the white chocolate magic shell topping.Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Mix until smooth then spread over the yoghurt layer.Top with passionfruit pulp and place in the fridge for 2 hours or overnight to set.You can also layer the oat/yogurt mixture with passionfruit pulp for a different variation..Serve with a drizzle of passion fruit pulp and yogurt if desired.
