Orange-y Energy Bars

Looking for a truly healthy snack bar? These no bake energy bars require only a handful of pantry staples and are super nutritious. They are great energy boosters and are packed with nuts, dried fruits and coconut.
Never go hungry again with these bars! They are perfect for meal prep and endlessly customizable. The great orange-y flavour makes them delicious to snack on and they will keep you full and satisfied for hours.
Not only are they totally kid-approved, but you can also let your kids help make them and choose fun coatings!
Take these healthy raw energy bars with you for a midday snack or serve them to your guests. They take only 20minutes to make!
Course Breakfast, Dessert, Snack

Ingredients

  • 1 cup almonds or walnuts, or a mix
  • 1 cup dates, soaked for at least 30 minutes and drained
  • 1 cup oats, instant or quick
  • 1 cup dried fruit, cranberries, figs, apricots
  • 1/2 cup coconut, desiccated
  • 1/2 cup coconut oil, melted
  • 1/2 cup peanut (or any nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1 orange, juice and zest (more if you want more orange flavour)
  • 1 teaspoon vanilla extract

Topping

  • Chopped nuts, dried chopped fruit of choice

Instructions

  • Line an 8 x 8 inch baking pan or dish with parchment paper leaving some hanging over the sides to act as a handle to get the bars out easily.
    Place nuts into a food processor and process until broken down and crumbly. Add the dates and continue to process until the mixture is well combined and sticky. 
    Add oats, dried fruit, coconut, coconut oil, peanut butter, honey, vanilla extract, orange juice and zest and pulse until well combined.
    Scoop mixture out into the lined pan and spread out evenly with the back of a spoon.
    Sprinkle with your choice of toppings and gently press down so they will stick.
    Place pan in fridge for a couple of hours for mixture to become firm and set. When firm, remove and cut into bars of desired size.
    Will keep up to 2 weeks in fridge or longer in freezer.
