Nuts And Berries Frozen Yogurt Bars

These frozen yogurt bars are easy to make, delicious to eat, and full of simple and healthy ingredients. So good for an 'on the go' breakfast or anytime snack. They are no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits.
The recipe also makes a super delicious dessert, loaded with protein, fruits and nuts. The beauty of this recipe is that you can add as much sweetener as you like, any fruit and berries that you like and make it in your way and taste.

Ingredients

Nutty Base

  • 1 cup almonds or walnuts or a mix
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/2 cup peanut (or any other nut or seed) butter

Yogurt Layer

  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Berry Sauce

    • 2 cups berries, fresh or frozen
    • 2 tablespoons water
    • 2 tablespoons honey

    Optional Topping Ideas

    • Fresh fruit, chopped
    • Nuts, chopped
    • Coconut shreds or pieces
    • Nut butter drizzle

    Instructions

    Nutty Base

    • Make the base first. Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
      Place almonds and coconut into a food processer and process until broken down and crumbly. Add dates, oats, peanut butter and vanilla and continue to process until mixture is sticky and well combined.
      Be careful not to over process as its nice to have texture and different sized“bits” in your yogurt bar base.
      Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the next 2 layers.

    Yogurt Layer

      • In a small bowl place the Greek yogurt, honey and vanilla extract and stir until evenly combined.
        Remove the nutty base layer from the freezer and pour the yoghurt mixture on top. Spread evenly and place back in the freezer while you make the berry topping sauce.

      Berry Sauce

      • In a small pot combine the berries, water, and honey over low-medium heat. Mash the berries a little and let the mixture gently simmer for a few minutes until it thickens.
        Remove from heat and place in the fridge to cool down and further thicken.
        When cool, pour the berry sauce on top of the yoghurt layer. Spread evenly. (Optional: Make a swirly design with a toothpick at this point!)
        Place in the freezer again to set completely for 1-2 hours or until the yogurt is solid.
        Remove from the freezer, cut into 8 bars or 16 squares to serve.
        Store any leftovers in freezer but take out 5-10 minutes before eating to allow them to soften a little.
