Nowadays, so called healthier ice creams line the freezer shelves of every mainstream grocery store. I’m all for it, but let’s just say the ingredient lists are still about as long as the supermarket till receipt.

That’s why I’ve become obsessed with making my own ice cream at home. It’s healthier, cheaper, and tastes better, too. Plus you know exactly whats in it and there are no hidden nasties.

If you haven’t already heard about it, I would like to introduce you to Nice Cream, a yummy ice cream made with a frozen fruit base and other add-ins! Its my favorite healthy ice cream because it’s quick and easy to prepare, with only a small handful of ingredients required.

You simply blitz pieces of frozen fruit in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.

You don’t need one of those special ice cream churning machines, you simply use frozen bananas, berries, a can of coconut cream and some flavourings – that’s it!

It sounds too good to be true doesn’t it? Ice-cream just out of fruit – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.

This healthy dessert recipe only requires 5 to 10 minutes of prep and a high-powered blender or food processor to get the job done. Light creamy texture, using real berries for that fresh fruit flavor.  The best ice cream you will ever make at home taking just minutes to whip up if you freeze the fruit ahead.

It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.

You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!

Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

Mixed Berry Coconut Protein Nice Cream

Nice cream is a dairy-free, refined sugar-free, healthy dessert made with fruit and/or non-dairy milk for a great alternative to ice cream. This recipe is made using only frozen bananas, blueberries and strawberries!

Ingredients

  • 3 bananas, sliced, frozen
  • 1 13.5 oz can coconut cream,full fat (solid part only) *see note below
  • 1 cup blueberries, frozen
  • 1 cup strawberries, frozen
  • 2 tablespoons honey or maple syrup
  • 1/4 cup protein or collagen powder
  • 1 lemon, juice and zest
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.
    When ready to make the nice cream, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. I feed it to my dogs and they love it.
    Add the hardened cream and all other ingredients to a high powered blender or food processor. Cover and blend until completely creamy.
    If you have a tamper, use the tamper to mash the fruit to help it blend.
    Taste test and add honey or more vanilla if you think it needs it.
    Serve immediately or freeze in a freezer-safe container for later.
    Customizable – Add your favorite toppings like fresh fruit, nuts, cacao nibs, or a drizzle of nut butter to make it your own.
    My go-to toppings are fresh berries and sometimes a drizzle of almond butter. The combo is SO good!
    To Freeze. Pour the ice cream mixture into the loaf pan and cover with plastic wrap. Every 20-30 minutes for the first hour, stir the ice cream by hand so it doesn’t become icy.
    Thaw and serve. Let the ice cream thaw for 10-15 minutes before scooping into serving bowls.
