Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate. When ready to make the nice cream, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. I feed it to my dogs and they love it.Add the hardened cream and all other ingredients to a high powered blender or food processor. Cover and blend until completely creamy. If you have a tamper, use the tamper to mash the fruit to help it blend. Taste test and add honey or more vanilla if you think it needs it. Serve immediately or freeze in a freezer-safe container for later.Customizable – Add your favorite toppings like fresh fruit, nuts, cacao nibs, or a drizzle of nut butter to make it your own.My go-to toppings are fresh berries and sometimes a drizzle of almond butter. The combo is SO good!To Freeze. Pour the ice cream mixture into the loaf pan and cover with plastic wrap. Every 20-30 minutes for the first hour, stir the ice cream by hand so it doesn’t become icy. Thaw and serve. Let the ice cream thaw for 10-15 minutes before scooping into serving bowls.
