Mint Chocolate Bark

Chocolate bark is surprisingly easy to make at home, its so simple your kids could make it! No stove, and no expensive chocolate necessary
This is the current flavour sensation – mint - drizzled on dark chocolate and broken into random bark shards.
Chocolate Bark is the easiest snack you will ever whip up. All you need are 4 simple (and completely customizable!) ingredients – chocolate chips, coconut oil, peppermint extract and food colouring (optional).
This homemade treat makes the perfect gift, package up little gift packs for a wonderfully thoughtful hostess gift, to teachers or to neighbours. Or just keep it for your family and yourself. 
This is one of those recipes you want to have in your back-pocket at all times. And, once you have made it the first time, you will be able to whip it up any time without having to follow a recipe.

Ingredients

Chocolate Layer 

  • 1 cup chocolate chips
  • 1 teaspoon coconut oil

Mint Chocolate Layer

  • 1 cup white chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon peppermint extract
  • 2-5 drops green food colouring

Instructions

  • You can use either the microwave method for melting the chocolate as per this recipe or the double boiler method - (pot of boiling water with a bowl resting on top) to melt the chocolate chips and the coconut oil together.
    Mix chocolate chips and coconut oil in a small bowl. Microwave for 30 second intervals, stirring well in between, until completely melted (this will probably take 1 1/2 - 2 minutes). Be careful not to overheat. Set aside.
    In a second bowl, combine the white chocolate chips, coconut oil, peppermint extract and food colouring. Microwave for 30 seconds, stir, then microwave in 15 second intervals, until the chips break down into a paste and you can mix it. They will NOT melt - just become pasty. Be careful again not to overheat.
    Spread green paste out on parchment paper about ¼ - ½ inch thick. Top with melted chocolate. Refrigerate until solid - around 1-2 hours.
    Break into pieces and enjoy! Store in refrigerator for best texture.
