These homemade lemon poppy seed protein bars are made with no refined sugar, and no additives. With just a handful of wholesome ingredients, you can create a high protein snack that tastes like dessert. Nobody will guess that they are actually good for you!

Lemon Poppy Seed Protein Bars
Ingredients
- 1 cup rolled oats
- 1/4 cup almond flour
- 1/4 cup desiccated coconut
- 1/4 cup protein or collagen powder
- 1/4 cup poppy seeds
- 2-3 tablespoons honey or maple syrup
- 1/4 cup coconut oil, melted
- 1-2 lemons, juice and zest – depending on how lemon-y you prefer
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium bowl, mix oats, almond flour, coconut, protein powder, poppy seeds, honey, lemon juice and zest together until well combined. Taste test and add more lemon or honey if you think it needs it.Press the mixture into a lined pan and refrigerate for 1-2 hours to firm up.Lift out the bars using the parchment paper handles and cut into 16 bars or more smaller squares.Store in fridge for up to 1 week or freezer for up to 3 months.
