Ingredients
1cup rolled oats
1/4cupalmond flour
1/4cupdesiccated coconut
1/4cupprotein or collagen powder
1/4cuppoppy seeds
2-3tablespoonshoney or maple syrup
1/4cupcoconut oil, melted
1-2lemons, juice and zest – depending on how lemon-y you prefer
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium bowl, mix oats, almond flour, coconut, protein powder, poppy seeds, honey, lemon juice and zest together until well combined. Taste test and add more lemon or honey if you think it needs it.Press the mixture into a lined pan and refrigerate for 1-2 hours to firm up.Lift out the bars using the parchment paper handles and cut into 16 bars or more smaller squares.Store in fridge for up to 1 week or freezer for up to 3 months.
