Lemon Delight Energy Bites

These Lemon Delight Energy Bites are soft, melt-in-your-mouth, healthy, no-bake with a refreshing coconut, lemon flavor. The combination of lemon and coconut is always a match made in heaven so this recipe with cashews and coconut is one for the lemon lover.
A healthy, delicious and nutritious snack made using just 4 ingredients - cashews, desiccated coconut, lemon and honey.
It takes just 10 minutes and a food processor to prepare these energy boosting snacks. Plus, each of these energy balls contain 4 grams of protein, and are perfect as a post-workout protein snack!

I have shared so many energy balls and bites recipes lately, and there’s a reason why I love these bite-sized foods so much. These Lemon Energy Bites are simply the BEST!
Stash some in the fridge or freezer as they taste delicious, are fulfilling, perfect as a nourishing sweet snack any time of the day.
Course Dessert, Snack


  • 1 cup cashews, soaked 3+ hours and drained
  • 1 1/2 cups desiccated coconut
  • 2-3 tablespoons honey or maple syrup
  • 2-3 lemons, juice and zest (depending on how lemon-ey you prefer)
  • 2 tablespoons hemp seeds - or chia or sunflower seeds

To Coat The Energy Balls

  • 1/3 cup desiccated coconut


  • Place the cashews and coconut into a food processor and process until broken down and crumbly. Add in honey, lemon juice and zest and pulse until well combined. Add seeds of choice and pulse again to incorporate.
    Be careful not to over process as its nice to have different sized ‘bits’ in your energy bites.
    Scoop out one tablespoon of batter, roll into balls between your hands, then roll into the desiccated coconut to coat.
    Store the balls on a plate covered with parchment while you roll the remaining batter into energy balls.
    Store energy balls in the fridge in an airtight container for up to 1 week.
    Store in the freezer for up to 3 months and thaw at room temperature.
