Lemon Coconut Mousse

Indulge in the refreshing fusion of zesty lemons and creamy coconut with this tantalizing whipped mousse recipe. This Coconut Mousse recipe is a light and airy dessert, not too sweet but also rich and creamy and light at the same time with lots of lemon flavor! 
It will stand alone as a dessert or healthy snack or it is the perfect topping to elevate your desserts with a burst of citrusy sweetness.
There are endless options for serving it. Dollop it onto almost any dessert – puddings, pancakes, crumbles, cupcakes, cheesecakes, parfaits, pies and cakes. Its also delicious on overnight oats, cooked oatmeal, smoothie bowls or on top of a healthy smoothie.
Its the perfect dessert to end a meal especially dressed up with fruits like berries and is sure to please everyone, and of course, the tropical tastes of mango or pineapple would also be delicious.
Coconut Cream also comes with many health benefit. With its nutritious fats and tons of nutrients, it plays a starring role in improving gut health and heart health. It adds good cholesterol and is full of anti-oxidants.

Ingredients

  • 1 13.5 oz can, full fat coconut cream or milk, chilled
  • 1-2 tablespoons honey or maple syrup
  • 1-2 lemons juice and zest, depending on how lemon-ey you prefer

Instructions

  • Either refrigerate the coconut cream/milk can overnight, or open and freeze about 10 minutes. (I store a can in the fridge so there is always one ready to go).
    Be sure to use full-fat canned coconut cream/milk for this recipe. Try not to shake the can, because you want the cream separate from the water underneath.)
  • Remove the lid from the chilled can then carefully scoop out the solid bit, the hardened coconut that has risen to the top, leaving the coconut “water” in the bottom of the can. You can add the left over coconut water to a smoothie, drink it or discard it.
    Using either a stand mixer or hand beaters, whip the cream until smooth and it has formed a mousse-like texture. Whip in the honey, lemon juice and zest, taste and adjust sweetness or flavour if needed.
    Be careful not to overmix, as it could heat the cream and cause it to turn to butter!
