Lemon Blueberry Overnight Oats

This overnight oats recipe is a nutritious and delicious way to start your day. Its an easy breakfast prepared the night before for a quick grab and go meal or snack. You just need a few minutes to whip it up!

This recipe uses simple, all natural ingredients including oats, fruit, creamy yoghurt and chia seeds. Oats are incredibly healthy and a great source of many important vitamins and minerals as well as fibre which, along with the healthy fats in the yoghurt, helps to make this a filling and nutritious breakfast.
You can add as many fillings or toppings as you like, or eat it by itself for a simple pre-made breakfast.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/3 cup coconut milk (or milk of choice)
  • 1/4 cup yogurt of choice
  • 1 tablespoon chia seeds
  • 1 lemon, juice and zest
  • 1-2 teaspoons honey or maple syrup
  • 1/2 cup blueberries - fresh or thawed
  • 1 scoop protein or collagen powder
  • 1/2 teaspoon vanilla extract

Optional Toppings

  • 1 teaspoon desiccated coconut
  • 1 tablespoon blueberries
  • Lemon zest to garnish 

Instructions

  • Combine all ingredients into a jar or container that can be sealed.
    Stir well to combine. I recommend stirring again after 1 hour to prevent the seeds from sinking to the bottom of the container.
    Chill overnight or at least for 4 hours.
    Serve with extra lemon zest, desiccated coconut and fresh blueberries.
    Store for up to 4 days in the fridge in an airtight container. Freeze in airtight jars and thaw in the fridge the day before.
