There is no better match than chocolate and coconut. They go together like two peas in a pod. A marriage made in heaven you might say. But if you are not a chocolate person I won’t hold it against you. I’ll simply move onto the second part of this recipe that makes me want to eat it constantly then – coconut. There is simply nothing better than the taste and texture of the coconut/chocolate candy combo.
This pretty chocolate coconut fudge is a healthier sweet treat for people who are trying to limit their sugar intake. Its naturally sweet, incredibly rich, smooth and uber coconutty, you would never know it’s protein-rich and refined sugar free.
Coconut fudge is one of the easiest ways to create a creamy, delicious healthy snack recipe without much effort in the kitchen. This easy fudge recipe has just a few ingredients and does not require any cooking or baking! Its naturally sweet, incredibly rich, smooth and uber coconutty, you would never know it’s refined sugar free and low carb.
Yes, seriously. It’s super simple to make and this recipe allows more time doing the things you love rather than being tied up in the kitchen, am I right?
This type of fudge is generally called “freezer fudge” which means it’s a new way of making fudge that is healthy and easy. It has been circulating around the internet for a little while now.
Essentially, it has several types of healthy fats, such as coconut cream, butter or oil, a nut/seed butter, some kind of sweetener along with a flavouring like vanilla or cocoa powder for a chocolate version. Depending on which ingredients you use will alter the taste/type of fudge.
Instead of needing to melt truckloads of sugar and butter together in a saucepan, and cooking it to an exact temperature…and then following a precise technique to get just the right texture…you simply gently melt the fats together, add the other ingredients then pop it in the freezer to set up.
The result is a healthier, lighter, yet still fudge-y, fudge that’s naturally sweetened. A win win in my book! Rich, smooth, squares of fudge bursting with coconutty goodness. That’s what we have going on here today, my friends. Count. Me. In!
This chocolate coconut fudge is silky smooth, and melts on your tongue. It is rich – as fudge should be – but not overly so. It has a nice nutty flavor that is not cloyingly sweet, like traditional fudge recipes tend to be. Just the right balance of sweet-to-creaminess ratio.
This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients. For those days where you are craving a candy bar, but want a healthy, delicious, low-effort way to enjoy the same sweet treat, I’ve got you covered with this recipe. With just a few healthy ingredients you can create a truly delectable bar that tastes better than any store bought version.
When I get a craving, it’s usually for sweets and fats. Coconut fudge always delivers the goods! It is such a satisfying snack that I never need more than one or two small pieces to feel content. And it’s made with healthy fats and natural sweeteners like honey or maple syrup. The resulting ‘fudge’ is only lightly sweet, which suits me well. Think of this as an ‘adult coconut ice’ and if you like that idea, you will love this fudge.
The high fat content of coconut makes this a very rich and satisfying treat. One or two pieces is all you need. I think that when the chocolate is calling my name, turning instead to a coconut based fudge like this one will really help me curb my sweet tooth.
Buzzword bingo here: this fudge is naturally vegan, paleo friendly, protein-rich and LCHF (low carb high fat), as well as gluten, nut and refined sugar free. It would make a lovely edible gift for that health conscious someone in your life.

Layered Chocolate Coconut Protein Fudge
Ingredients
Chocolate Layer
- 1 1/2 cups dark chocolate chips
- 1/4 cup coconut oil
- 1/2 cup thick creamy coconut cream or milk, full fat
- 1 teaspoon vanilla extract
Coconut Layer
- 1 1/2 cups desiccated coconut
- 1/4 cup coconut oil, melted
- 1/4 cup thick creamy coconut cream or milk, full fat
- 2 scoops protein or collagen peptides powder, plain or vanilla
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Topping
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Make the chocolate layer first: In a small saucepan over very low heat, melt dark chocolate and coconut oil while stirring continuously. Stir in coconut milk and remove from heat, then stir in the vanilla.Spread the chocolate mixture in the parchment lined dish using a spatula or back of a spoon to smooth it out evenly. Chill in the freezer while you make the coconut layer.
Coconut Layer
- To make the coconut layer, mix all ingredients together in a medium bowl until fully combined.Sprinkle the coconut layer evenly over the thickened chocolate layer (shouldn't be completely set or the two layers will separate as they cool). Gently spread out evenly with a spatula or back of a spoon.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour over the coconut layer and spread out evenly with a spatula or back of a spoon. Put in the freezer for 10 minutes to set and then cut into 16 squares (or more) to serve!Store leftovers in either the freezer or refrigerator. The freezer will give it more of a candy bar consistency while the fridge will make it more like fudge.
