Healthy Raspberry Protein Bars

These homemade protein bars are made with wholesome ingredients and naturally sweetened with dates. They are thick and chewy - my healthier take on the store-bought protein bars that in my earlier fitness days I had to rely on to get enough protein in during the day while I was super busy running a gym and training clients.
I grew tired of forking out tons of money for a store-bought protein bars, and opted to make my own and immediately felt SO much better about it. Not only are they way healthier but you can make them for around one third of the price of store bought bars.
These no bake raspberry bars are simple and the perfect protein packed treat when you are on the go. I love how each bar has over 21 grams of protein!
This recipe is for you if you like the tanginess of raspberries, mixed with oats, peanut butter, protein powder and a touch of coconut oil to help glue them together. They are a cross between blondies and cookie dough, and needless to say, they taste absolutely sublime! The best part? They are actually good for you.
These bars contain no butter or hydrogenated oils, no cane sugar, no artificial flavours and colours and no shelf-extending preservatives that make supermarket-ready bars last as long as possible.
Simply smooch up a bunch of ingredients together, press them onto a loaf pan, and leave the mix to set overnight. Open the fridge in the morning and you will wake up to a bunch of yummy bars to enjoy for breakfast, pre- or post- workout, or simply as a snack for school or work.
You can customize this recipe as you like. Add chopped nuts, chocolate chips, coconut flakes or other dried fruit. You can play around with the nut or seed butters too, and use almond or cashew butter, or tahini (sesame seed butter) instead of peanut butter.
 If you want to swap out the almonds for other nuts or even seeds like hemp or chia, or use more nut or seed butte. Sunflower seed butter, for example, is delightful in these bars.
I added some freeze-dried raspberries on top of my bars along with some chocolate drizzle to add a touch of decadence.
Anything goes! Just make it yours!

Ingredients

  • 1 cip oats, instant or quick
  • 1/2 cup almonds
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup protein or collagen powder
  • 1/2 cup peanut (or any other nut or seed) butter
  • 2 tablespoons coconut oil
  • 1 cup raspberries, fresh. or frozen and drained

Topping

  • 2 tablespoons freeze dried raspberries

Optional Chocolate Drizzle

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Linea 8 x 4” loaf pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place almonds and oats in a food processor and process until broken down into a coarse flour like mix. Add dates, protein powder, peanut butter and coconut oil and continue to process until well combined.  
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your bars.
    Lastly add the raspberries and pulse a few times to combine but still leave bits of them whole.
    Pour the mixture into the lined pan and spread evenly with a spatula or the back of a spoon. Place in freezer to firm up and set.
    Once set, remove bars from pan using the parchment paper handles and slice into 10-12 bars depending on your preferred size. Place back in freezer while you melt the chocolate coating.
     

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top)melt the chocolate chips and the coconut oil together.
    Place the bars on a cake rack and drizzle chocolate over with a spoon.
    Put the bars into the freezer for at leas 2-3 hours.
    Once chocolate is set and crisp, enjoy your homemade protein bars.
