Coconut butter fudge is one of the easiest ways to create a creamy, delicious healthy snack recipe without much effort in the kitchen. This easy fudge recipe has just a few ingredients and does not require any cooking or baking!

Its naturally sweet, incredibly rich, smooth and uber coconutty, you would never know it’s refined sugar free, low carb, protein-rich and gluten free too.

Yes, seriously. It’s super simple to make and this recipe allows more time doing the things you love rather than being tied up in the kitchen, am I right?

This type of fudge is generally called “freezer fudge” which means it’s a new way of making fudge that is healthy and easy. It has been circulating around the internet for a little while now.

Essentially, it has several types of healthy fats, such as coconut cream, butter or oil, a nut/seed butter, some kind of sweetener along with a flavouring like vanilla or cocoa powder for a chocolate version. Depending on which ingredients you use will alter the taste/type of fudge.

Instead of needing to melt truckloads of sugar and butter together in a saucepan, and cooking it to an exact temperature…and then following a precise technique to get just the right texture…you simply gently melt the fats together, add the other ingredients then pop it in the freezer to set up. The result is a healthier, lighter, yet still fudge-y, fudge that’s naturally sweetened.

This coconut butter fudge is silky smooth, and melts on your tongue. It is rich – as fudge should be – but not overly so. It has a nice nutty flavor that is not cloyingly sweet, like traditional fudge recipes tend to be. Just the right balance of sweet-to-creaminess ratio.

This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients. For those days where you are craving a candy bar, but want a healthy, delicious, low-effort way to enjoy the same sweet treat, I’ve got you covered with this recipe.

With just a few healthy ingredients you can create a truly delectable bar that tastes better than any store bought version.

How I created this recipe:

It all started with raspberries.  I’m truly surprised that they survived long enough to be transformed into fudge.  I usually eat the entire package the second I get home from the grocery store.  Oh wait, now I remember why…  I bought two packages!  One for snacking, one for this yummy recipe.  😉

Raspberries are great on top of cheesecakes and ice cream, baked into cakes, tarts and pies, added to smoothies, yogurt and oatmeal…  but most of all, they are great on their own.  Personally, I like to mix raspberries into stuff.

They are great with dark chocolate (or any chocolate), but I like ’em best with coconut and recently coconut butter came in to my life. Hello, nice to meet you. Coconut butter fudge has been my go-to treat for a while now.

When I get a craving, it’s usually for sweets and fats. Coconut butter fudge always delivers the goods! It is such a satisfying snack that I never need more than one or two small pieces to feel content. And it’s made with healthy fats and natural sweeteners like honey or maple syrup.

Coconut butter is creamy and naturally quite sweet. It lends itself perfectly to making easy, healthier sweet treats like this one. I had it whipped up and setting in the fridge all in about five minutes. So simple. It’s lightly sweetened with a touch of maple syrup, and made special with a handful of freeze dried raspberries crushed and stirred through. Yum

The resulting ‘fudge’ is only lightly sweet, which suits me well. Think of this as an ‘adult coconut ice’ and if you like that idea, you will love the fudge. The high fat content of coconut makes this raspberry fudge a very rich and satisfying treat. One or two pieces is all you need. I think that when the chocolate is calling my name, turning instead to a coconut based fudge like this one will really help me curb my sweet tooth.

Healthy Raspberry Coconut Butter Fudge

This pretty coconut butter fudge with freeze dried raspberries flecked through it is a healthier sweet treat or edible gift for people who are trying to limit their sugar intake. Its naturally sweet, incredibly rich, smooth and uber-coconutty, you would never know it’s protein-rich and refined sugar free.

Ingredients

  • 2 cups coconut butter, store bought or homemade, sugar-free recipe below in notes
  • 1/2 cup freeze dried raspberries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  • Line a 7 x 5-inch loaf pan or small baking dish or tin with baking paper. Or use a silicon bar mold.
    Soften coconut butter in a pan over low heat, or in the microwave until liquid. Stir through honey,coconut oil, vanilla and lemon juice.
    Using your hands, roughly crush the raspberries and sprinkle into the fudge mixture. Stir through, then pour into baking dish and smooth surface with a spatula or back of a spoon.
    Refrigerate until firm, then slice into even 12 (more or less) pieces.
    Store in the fridge or freezer as the fudge will soften at room temperature.
