Servings 12
Ingredients
- 1 cup mixed nuts (almonds, pecans, walnuts, or macadamia nuts)
- 1/2 cup dried fruit of choice, cut up if large pieces – I like a mix of dried berries and sultanas
- 1/4 cup desiccated coconut
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- Optional: 1/2 teaspoon vanilla extract or 1/2 teaspoon cinnamon for extra flavor
Instructions
- Toast the nuts (optional) to add more flavour: Preheat the oven to 350°F (175°C). Spread the mixed nuts on a baking sheet and toast them in the oven for about 5-7 minutes, just until they are fragrant. Keep an eye on them to avoid burning. Remove and let them cool.Melt the chocolate: Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth. Save some chocolate chips for the topping – optional.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Add the cooled mixed nuts and dried fruit to the melted chocolate. Save some to put on top of the clusters. Stir until all are evenly coated.Using a spoon, scoop small portions of the mixture and drop them onto a parchment-lined baking sheet to form 12 clusters or more smaller ones for your size preference. Top with left over nuts, dried fruit and chocolate chips.Refrigerate for 30-40 minutes or until the clusters are set and firm.Store in an airtight container in the fridge for up to 2 weeks.
