Healthy Lemon Coconut Candy

Healthy Lemon Coconut Candy

Bright, tangy, coconutty, and slightly sweet. A perfect combination of a satisfying treat without the guilt!
I have made these candies for years. The original recipe has evolved and they are my go-to whenever I want something sweet but don’t want to make a big batch of something I will later regret eating. They are easily portion controlled, and the richness of the coconut cream and coconut oil is very satiating to the taste buds.
As with any of my recipes, feel free to tailor this recipe to suit your own personal tastes. You can vary the type of citrus you use - orange, lime, tangerine, and even grapefruit are all nice.  You can add as much or as little as you like. The citrus and coconut pair so nicely together.
These hold up pretty well outside the fridge. They taste delicious, both cold and at room temperature. I prefer them at room temperature because the citrus pops even more, and they have a delicious fudge-like texture.
Oh, and did I mention they are easy to make? They only take a few minutes, so they’re great to keep in mind for those times when you need a really fast dessert.
People trying to reduce their sugar intake often complain about the lack of sweets in their quest to get healthier. That’s because a low-carb way of eating is very focused on eliminating harmful sugar from your diet. But there are options for that lingering sweet tooth in your life.
Hence these lemon candies are both low-carb and packed with healthy fats and antioxidants. Eating more healthy fats are a great way to help to satisfying your sweet cravings without the sugar.
Not only are these coconut candies insanely delicious and easy to prepare, but they also come with some surprising health benefits. From vitamins and minerals to plenty of healthy fats that support hormone health and neurotransmitter production, these little delights are the perfect addition to any healthy eating plan.

  • 1 cup coconut cream, store bought or recipe below in notes
  • 1/2 cup coconut oil
  • 1/2 cup desiccated coconut
  • 1-2 tablespoons honey or maple syrup
  • 1-2 lemons, juice and zest (depending on how lemon-ey you like it)
  • 1 teaspoon vanilla extract

  • Lemon zest
  • Shredded coconut

  • Over low heat, in a small sauce pan, gently warm the coconut butter and coconut oil until the oil melts, and the butter is smooth.
Stir in the desiccated coconut, honey, vanilla, lemon juice and zest. Stir until combined.
Taste test and add more honey or lemon if you think it needs it.
Spoon the mixture into silicon snack or bar molds of your choice (I use little mini silicone muffin pans), or you can spread it into a glass dish and then cut it into chunks later.
Chill in the freezer or fridge for an hour or until firm.
Store in an airtight container in your fridge or freezer.
