I spent years and years without fudge! It’s ordinarily laden with truckloads of sugar and loads of butter so I steered well clear of it. Then, a few years back, I discovered coconut butter or as its sometimes known – creamed coconut.
This discovery transformed my culinary experience forever, not least when I created the most delicious chocolate coconut fudge I have ever tasted.
Coconut butter is the dehydrated fresh flesh of a mature coconut, which has been ground into a semi-solid white cream, forming a solid block that melts upon heating.
One day I was admiring the properties of this substance and had an earth-shattering ‘aha’ moment. Coconut butter just happens to make the perfect base for a dairy-free ‘fudge’. It’s naturally sweet and solidifies to perfection, and so chocolate coconut fudge was born.
This recipe combines coconut butter, peanut butter, cocoa powder and honey to make soft, creamy, irresistible no-bake fudge. It takes just 5 minutes for this fudge to come together before it chills in the refrigerator until firm, about 2 hours. That is, if you can patiently wait that long!

Healthy Coconut Butter Chocolate Fudge
Ingredients
- 1 cup coconut butter, store bought or homemade sugar free recipe below in notes
- 1/4 cup peanut (or any nut or seed) butter
- 1/4 cup honey or maple syrup
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Topping
- Desiccated coconut
Instructions
- Line a 7×5-inch loaf pan with parchment paper, or alternatively line a mini muffin tin with muffin liners. Or use a silicon baking pan, candy mold or ice cube tray.Gently melt coconut butter in a saucepan over low heat or in the microwave for about 30 seconds to a minute. Stir the nut butter, honey and cocoa powder into the melted coconut butter until completely smooth.Pour mixture into the prepared pan or liners. Sprinkle with desiccated coconut.Place in the refrigerator and chill until firm, about 1-2 hours.Let soften at room temperature for about 10 minutes before cutting into 12 or more squares with a sharp knife. Store in the refrigerator for up to 1 week or freezer for up to 3 months.
